Stout and Chocolate Cup Cakes with Cream Cheese Frosting

Designed to look like mini pints of Stout, these cupcakes incorporate classic Irish Stout into the baking mix, to give them a slightly earthy flavour – making them a grown-up treat for everyone.
Ingredients:
For the base
100g Digestive Biscuits
40g Kerrymaid Dairy Spread
For the Cupcakes
125g Kerrymaid Original
110g Caster sugar
3 Medium eggs
100g Self raising flour
10g Cocoa Powder
50ml Stout
For the Cream Cheese Frosting
200g Kerrymaid Soft Cream Cheese
75g Icing sugar
1/4 tsp Vanilla Pod Seeds
Method:
1. Pre-set oven to 180c.
2. Beat the Kerrymaid Original and sugar until pale and fluffy.
3. Add the eggs one at a time and beat.
4. Fold in the flour and Stout.
5. Line a bun tray with 6 bun liners.
6. Spoon in the mixture and bake for 20 minutes.
7. Cool on a wire rack.
8. Beat the Kerrymaid Cream Cheese and icing sugar until pale and fluffy.
9. Mix in the vanilla pod seeds beat for a further minute.
10. Spoon into a piping bag and pipe onto the cool cupcakes.
