Smoked Bacon & Cream Cheese Tartlets

A summer menu special – these light bites are ideal served as a starter, or can be sized up for a main course meal. The bacon adds a smoky taste of summer, while the cream cheese keeps the whole dish light.

Ingredients

  • 200g Flour
  • 100g Kerrymaid Dairy Spread
  • Pinch salt
  • 40g Kerrymaid Single Cream

For the filling

  • 100g Smoked Bacon Pieces - cooked
  • 80g Kerrymaid Cream Cheese
  • 1 Onion, cooked
  • ½ Red pepper
  • Salt, black pepper, garlic and basil – to season
  • 25g Kerrymaid Single Cream
  • 100g Water
  • 50g Eggs

Method

  1. Blend together 100g of the flour, the salt and Kerrymaid Dairy Spread, and mix to a paste.
  2. Blend in the remaining 100g of flour and mix to a crumble.
  3. Add the Kerrymaid Single Cream and form a smooth paste, do not over mix.
  4. Roll out pastry with rolling pin to required thickness, cut out disc for bases and place into individual tartlet cases (preferably 2½ -3 inch tartlets tins).

For the filling

  1. Precook bacon pieces and onion, and add salt, pepper, garlic and basil for seasoning as required.
  2. Place the filling into the pastry bases, and add small lumps of cream cheese to each tartlet.
  3. Whisk together the Kerrymaid Single Cream, water and egg for 2 minutes on slow speed then add the fillings to the tartlets.
  4. Bake in preheated oven at 180C for approx. 30 minutes (or 160C in a convection oven).
