White Onion Soup

Serves: 4-6

A modern take on a French classic this uses ingredients found in almost every kitchen – making a great, last-minute or ‘special’ dish. You can either blend the soup for a thicker, heartier soup or leave the chopped pieces (as below) for a finer, lighter touch.

Ingredients

  • 3 tbsp extra virgin olive oil
  • 100g garlic cloves, chopped
  • 4 medium-sized onions
  • 1 large sprig of fresh thyme
  • 3 tbs white wine
  • 1 litre water
  • 25g Recipere Vegetable Bouillon Paste
  • Freshly ground salt and pepper
  • 100ml Kerrymaid single cream
  • Parsley, finely chopped

Method

  1. Heat the oil in a medium-sized pan, then add the garlic, thyme and onions. Cook over a low heat until soft but not coloured.
  2. Add the white wine and cook until the onion has absorbed it. Make up the Recipere Vegetable Bouillon Paste according to pack instructions, add it to the onions, season well and then simmer for 15-20 minutes.
  3. Finish with a swirl of Kerrymaid Single Cream and chopped parsley and serve.
