White Chocolate & Cherry Trifle

Serves: 6

Ingredients

  • 10 x chocolate biscuits, broken
  • 200g Margetts Red Cherry Filling
  • 350g/12oz white chocolate melted and cooled slightly
  • 100ml/ 3.5 fl oz Kerrymaid Custard
  • 400ml/ 14fl oz Kerrymaid Whipping Cream whipped to soft peaks

Garnish

  • Plain Chocolate
  • White Chocolate
  • Mint Leaves

Method

  1. Slowly add the slightly cooled white chocolate to the custard then fold in the softly whipped cream.
  2. Place all the ingredients in the fridge one hour prior to assembling the dessert.
  3. Put a layer of chocolate biscuits in the bottom of a tall glass, then carefully spoon in enough white chocolate mousse to fill the glass by one third, then add another layer of the chocolate biscuit, and another layer of mousse.
  4. Add a layer of red cherries another layer of mousse and a final spoon of cherries.
  5. Garnish with white and dark chocolate shavings and mint leaves.
